Ingredients Needed:

  • Large flour tortillas
  • Cream cheese
  • Packet taco seasoning
  • Minced garlic
  • Shredded cooked chicken
  • Cheddar cheese, shredded
  • Can Rotel with green chilis, well drained
  • Green onions, sliced

How to Make Chicken Enchilada Pinwheels

In a small bowl, blend the cream cheese, taco seasoning, and minced garlic until smooth and evenly mixed.

Lay the tortillas flat and divide the cream cheese mixture among them, spreading it to cover the surface evenly.

Evenly layer the shredded chicken, cheddar cheese, Rotel, and sliced green onions over the tortillas.

Starting at one end, roll each tortilla tightly into a log. Wrap each log in plastic wrap to secure it.

Place the wrapped rolls in the refrigerator for at least an hour to firm up and make slicing easier.

Remove the plastic wrap, then cut each roll into 1-inch slices, discarding or enjoying the ends as a chef’s treat. Arrange on a platter and serve immediately!

  • 4 large flour tortillas
  • 8 oz cream cheese
  • 1.25 oz packet taco seasoning
  • 1 tsp minced garlic
  • 2 cups shredded (cooked) chicken
  • 1 ½ cups cheddar cheese, shredded
  • 10 oz can Rotel with green chilis, well drained
  • 4 green onions, sliced

Instructions

  1. In a small bowl, combine the cream cheese, minced garlic, and taco seasoning, until well mixed.
  2. Lay out the tortillas, and divide the mixture evenly between them, then spread over the surface of the tortillas.
  3. Sprinkle chicken over the tortillas, then cheese, followed by the Rotel and green onions.
  4. Start from one end of the tortilla, and roll it into itself, until it meets the other end.
  5. Wrap in plastic wrap, and refrigerate for 1 hour, or until ready to serve.
  6. Once ready to serve, remove the plastic wrap, and cut each tortilla roll into 6 one inch pieces, discarding the ends (or snacking on them!)
  7. Enjoy!
